Tadka 101: which spice goes in first, and why
Hing before jeera, mirch off the flame. The order of a tadka decides how your dal tastes.
A tadka (tempering) takes under a minute, but it's where most of a dal's flavour comes from. The trick is order, because each spice needs a different amount of time in hot fat.
The order that works
- Heat the fat first. Ghee or mustard oil, hot but not smoking. If you're using mustard oil, let it smoke once, then lower the heat.
- Seeds go in first: jeera, rai, methi dana. Wait for the jeera to splutter and darken by one shade.
- Hing next: just a pinch. It fries in two seconds.
- Aromatics: garlic, ginger, green chilli, curry leaves.
- Powders last, flame off: Kashmiri mirch and haldi burn easily. Switch off the gas, add them, swirl and pour.
Common mistakes
- Adding powders to very hot oil: they burn and turn bitter.
- Too much methi: a few seeds add depth, a spoonful turns the dal bitter.
- Using old jeera: if it doesn't smell when you rub it between your fingers, replace it.
